  • 1/2 cup artichoke hearts, drained and roughly chopped
  • 2 tbsp fresh basil, chopped
  • 1/2 cup grated parmesan cheese
  • 3/4 tsp Italian seasoning
  • salt and pepper
  • 2 medium eggplants
  • olive oil
  • 1 cup flour
  • 2 eggs 1 cup breadcrumbs
  • marinara sauce, for serving
  • 1 cup mozzarella cheese, for serving
  • 1/2 cup shredded parmesan cheese, for serving
