  • 3 tablespoons olive oil
  • 1 large onion, finely chopped
  • 6 – 8 cloves garlic, minced
  • 1 26.46 ounce carton Pomi tomato sauce
  • 2 teaspoons ground cumin
  • 2 teaspoons dried oregano
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • Grindings of black pepper
  • 2-4 tablespoons home-made Ancho chile paste
