Ingredients

  • 1/3 cup olive oil
  • 1 pound onions, peeled, halved and sliced lengthwise
  • 1/3- inch thick
  • 2 pounds carrots
  • ½ pound jalapenos
  • 1-2 cloves of garlic
  • 1 bay leaf
  • 1 teaspoon dried oregano
  • 3 cups white vinegar
  • 1 cup water
  • 3 tablespoons kosher salt
  • 1 tablespoon sugar
