Ingredients

  • 6 medium size
  • fried sage
  • 1/2 cup of canola oil
  • 1/2 cup of olive oil
  • A packet or bunch of sage leaves (20-30 leaves)
  • a pinch or two of Kosher salt
  • 18 fried sage leaves
  • 3 cups of all purpose flour
  • 1 tsp of Kosher salt
  • 1 tsp of baking powder
  • 1/2 cup of vegetable shortening, frozen
  • 1 stick of salted butter (1/4 lb), frozen
  • 1/2 to 2/3 cup of ice water
  • salt
  • pepper
  • for a sheen on the crust, one egg and 1 TBSP of water
  • 3 Turkey drumsticks (or leftover turkey from Thanksgiving)
  • You will need about 2 cups of cubed turkey meat. A little more or a little less is okay too.
  • 4-6 large carrots, divided
  • 2-3 to roast with the turkey & 2-3 to dice. You will need 2 cups of “pea-sized” diced carrots, blanched
  • 1 medium sized onion
  • 2 1/2 tsp salt, divided
  • 1/2 tsp of pepper
  • 1 bay leaf
  • 5-6 whole black peppercorns
  • 2 tsp of jarred bouillon such as Better than Bouillon or 1 1/2 Bouillon cubes.
  • 6 cups of water
  • 1 1/2 sticks of unsalted butter (12 TBSP)
  • 1 pint of pearl onions (preferably pre-peeled)
  • 1 10 oz package of frozen peas
  • 1/2 cup of heavy cream
  • 3/4 cup of all purpose flour
  • 1 celery stalk
  • 1/3 cup of dried cranberries
  • 1/3 cup of fresh cranberries
