Ingredients

  • ½ cup raw unsalted cashews
  • 13 cups low-sodium vegetable broth
  • 11 cup farro
  • 1½ cup unsweetened plant milk
  • 12 tablespoons white balsamic vinegar
  • 11 teaspoon Dijon mustard
  • 11 teaspoon pure maple syrup
  • 1½ teaspoon onion powder
  • 1 Sea salt and freshly ground black pepper, to taste
  • 13 cups assorted fresh mushrooms, such as button, cremini, oyster, and/or shiitake, sliced
  • 11 cup thinly sliced leeks
  • 1½ cup chopped celery
  • 1½ cup chopped carrot
  • 13 cloves garlic, minced
  • 12 cups torn fresh kale
