Ingredients

  • 159 Calories, 4 g Protein,
  • 28 g Carbohydrates, 7 g Dietary Fiber, 5 g fat ( 1 g sat , 3 g mono 1 g poly), 0 mg Cholesterol, 105 mg Sodium
  • 2 Tbsp. of extra virgin olive oil
  • 1/2 large or 1 medium onion, diced
  • 2 stalks celery, sliced
  • 2 lb of bulb fennel, trimmed, washed and diced
  • 1 lb of Yukon gold potatoes, peeled and diced
  • 6 garlic cloves or 1/2 head green garlic, peeled and cut in half
  • Salt to taste
  • A bouquet garni made with a bay leaf, a couple of sprigs each parsley and thyme, 1/2 tsp of fennel seeds and 1/4 tsp of black peppercorns, tied in cheesecloth
  • 2 qt of water, vegetable stock or chicken stock
  • Freshly ground pepper
