Ingredients

  • 1 1/2 pounds boneless chicken thighs
  • salt and freshly ground black pepper
  • 3 tablespoons olive oil
  • 2 onions, chopped
  • 1 red or green bell pepper, cut into 1″ pieces
  • 3 garlic cloves, chopped
  • 1/4 – 1/2 teaspoon crushed red pepper flakes (to taste)
  • 1 1/2 cups chopped tomatoes (or 1 can diced- drained)
  • 5 cups chicken broth, vegetable broth or water
  • 2 teaspoons pimenton (roasted red pepper)
  • 1/2 teaspoon dried thyme, crumbled
  • 2 teaspoons smoked paprika
  • 1 cup fresh or frozen shelled peas
  • 2 bay leaves
  • 12 ounces perciatelli pasta or baby elbows
