Ingredients

  • 1/2 pound bacon, diced
  • 1 onion, halved and sliced thin [I used a vidalia]
  • 1 Tablespoon fresh thyme, leaves only
  • 3 garlic cloves, minced
  • 1/4 cup apple cider vinegar
  • 1 Tablespoon mustard seeds
  • 2 Tablespoons brown sugar
  • 1/4 cup beer
  • 1 package dry yeast [about 2¼ teaspoons]
  • 3/4 cup warm water [100ºF to 110ºF]
  • 1 Tablespoon sugar
  • 3 2/3 cup bread flour
  • 1/2 cup whole wheat flour
  • 3/4 cup beer [I used a Detroit brewed pale ale]
  • 1½ Tablespoons fresh thyme, leaves only
  • 1 teaspoon salt
  • cooking spray
  • 1 recipe bacon, thyme, onion chutney [about 1 cup]
  • 1 large egg white, lightly beaten
  • 1 Tablespoon water
  • 18 minutes for rolls
  • 30 minutes for loaf, or until golden brown
