Ingredients

  • 4 cod fillets, each weighing 100g
  • vegetable oil
  • 1 lemon, juiced
  • salt
  • 50 g of butter
  • 1 shallot
  • 1 garlic clove
  • 1 sprig of thyme
  • 100 ml of white wine vinegar
  • 100 ml of white wine
  • 100 ml of double cream
  • 250 g of butter
  • 1 handful of chives, chopped
  • 500 g of Jersey Royal potatoes
  • 1/2 lemon, juiced
  • 4 free-range eggs
  • 1 dash of white wine vinegar
  • 2 handfuls of baby cress
  • 4 handfuls of spinach
