Fish pie with crunchy bacon and leek topping / Empadão de peixe, com cobertura crocante de bacon e alho francês.

Ingredients

  • 500 ml milk
  • 1/2 tsp black peppercorns
  • 2 bay leaves
  • 800 g firm white fish fillets
  • 250 g smoked haddock
  • salt and freshly ground black pepper
  • 2 tbsp olive oil
  • 1 onion
  • 1 large leek
  • 2 celery sticks
  • 3 spring onions
  • 8 large potatoes
  • 1 tsp fine salt
  • large knob of butter
  • 3 tbsp milk
  • 3 tbsp cream
  • 1 small leek, trimmed, washed and thinly sliced
  • 3 spring onions
  • 1 tbsp salted capers
  • 6 rashers bacon, fat and rind removed, very finely diced

  • 300 ml cream
  • 1 tsp parsley, finely chopped
  • 1 tsp dill, finely chopped
  • 1 tsp tarragon, finely chopped
