I wanted to make really colourful fish taco’s that were quite basic but still had a bit of a special edge to them so I went with fried hake, pickled carrots and cabbage, red onion, crispy radishes and mango with a very easy dressing made of sour cream and avocado
Steamed Mouse Grouper Fishwith Mushrooms, Soy Sauce, Ginger, Scallion and Cilantro. Sounds boring, but trust me, your taste buds will apreciate the sweetness and the soft texture of the steamed live humpback grouper, eventhough in fact the chef cooked the fish a tad overcooked, yet it still taste superb when i eat it without any dipping sauce
Combine all of the Avocado-Cilantro Sauce ingredients in a food processor or blender. Cook for 4-5 minutes on each side, or until the outside is blackened and the fish flakes apart easily. Remove the fish from the heat, and if desired, warm the corn tortillas in the same skillet over medium heat, cooking for about 30 seconds on each side. Distribute the fish evenly between the 6 sets of tortillas, and top with Slaw and Avocado-Cilantro Sauce
This comes together super fast and I paired it with a quick salad of mixed greens. You can also play and add cream, sour cream or yogurt - whatever you have on hand to make it a perfect pairing to some pasta or rice
Place it on a pan together with the garlic, ginger, shallots and chinese celery. Cooking fish stew in light soy sauce is best served with a fishsauce and lemon condiment
Vegetarians can substitute fishwith potato, eggplant or okra in the recipe. This dish tastes the best when served with steamed rice and is also a classic accompaniment for many south Indian breakfast recipes
I made mine with only one layer of bananas over the pastry cream layer and I decided they definitely needed a second one underneath (after I’d already piped mine out
However, if you are allowing some creaminess into your life, the tartar is a must. Cut fish filet into longer skinny pieces and season with salt & pepper
