Ingredients

  • /3.5 oz good quality dark chocolate
  • /3.5 oz good quality milk chocolate
  • /4.4 oz unsalted butter
  • 5 eggs
  • 2/3 cup brown sugar
  • 2 tsp vanilla essence
  • /4.4 oz almond meal
  • 2 tbsp whiskey
  • 1/3 of the mix into the chocolate mix, and then the remaining egg whites. Fold carefully so as not to knock the air out of the mix. Spoon into the prepared pan and bake for 50 minutes or until a skewer, fork or cake tester inserted into the centre comes out clean.   • 1/2 cup caster sugar
  • /1.59 oz butter
  • 3/4 cup thickened cream
  • /1.59 oz milk chocolate
  • 3/4 cup whisky
  • 1/4 cup white sugar
  • 2 tbsp water
  • 200 g hazelnuts
