When I started experimenting baking with yeast, there was a request from my father-in-law to prepare Potato stuffed Buns, which he says he used to have from a bakery a couple of decades ago
Mash Potatoes are perfect for an easy delicious meal, and if you stuffed the mash is just out of this world, yes you can make a roll with mash potatoes and love it
Since I had already made loaf bread with the Tangzhong method, for the March month’s bread with ‘We knead to bake’, I made shaped and filled rolls/buns
In order to make full use of the leftover steamed sweet potato chunks, I mashed them into paste and added cocoa powder, honey and whipped cream, to make them into a soft filling for the buns
I emailed my friend, an amazing artisan bread maker Rachel from Montclair Bread Company , she generously shared her basic bun recipe and then once I read it through I combined it with another recipe and made delicious mini Potato Buttermilk Mini Buns
Instead of making a dry stuffing with peanuts, i prepared a quick stuffing with cooked and mashed potatoes along with crushed peanuts, the addition of peanuts makes this stuffing more crunchy and nutty
Now add the potato, carrot, salt and water ( water level should be above the potato), bring to boil and simmer until potato turns soft, stirring occasionally to avoid sticking to the bottom of the pan
I used chicken stuffing for this buns……you can make sweet stuffings also………. Home made buns are really tasty and if it is stuffed then it is more tasty………
And then there are potatoes. Thank goodness for potatoes. So while the kiddos ate their French bread pizzas, I did a little number on a baked potato and it was good
Peel potatoes, cut into chunks and add to a medium size saucepan. Transfer mashed potatoes to a mixing bowl and add nutmeg, Kosher salt, coarse black pepper and mix well to combine
That is spicy potatofried rice. Usually we use potatoes to make samosa, cutlet and kurma etc. Garnish with coriander leaves and serve spicy potatofried rice
