Vegetable FriedRice is a popular Indo Chinese dish that is usually served with a gravy dish. This rice tastes best with left over & cooled rice as the moisture in freshly cooked rice make this dish lumpy by steaming the rice further instead of stir-frying
Today, I am going to show you how I make FriedRice. Add the chopped garlic, this is to infuse garlic flavor into the oil (you can remove the fried garlic if you dont like garlic in your food)

Stir in rice, green onions and soy sauce mixture. Add shrimp, and cook, stirring occasionally, until pink, about 2-3 minutes. Add garlic and onion to the skillet, and cook, stirring often, until onions have become translucent, about 3-4 minutes. Stir in carrots, corn and peas, and cook, stirring constantly, until vegetables are tender, about 3-4 minutes
One of the ways I adapted the original recipe was by using hard-boiled eggs, which can easily be prepared in advance, in place of the stir-fried egg typical of friedrice
