  • 10 popsicles Ingredients Yellow Layer 1 mango, sliced (about 1 cup) 1 banana, sliced
  • 4 tablespoons coconut milk Green Layer ½ cup honeydew melon, diced 1-2 kiwis, diced ½ cup green grapes 4 tablespoons coconut milk Red Layer ½ cup strawberries (fresh or frozen) ½ cup raspberries (fresh or frozen) 4 tablespoons coconut milk Purple Layer 1 cup blueberries (fresh or frozen) 4 tablespoons coconut milk Instructions In a blender, puree mango, banana and 4 tablespoons coconut milk to create the yellow layer. Pour the mango puree evenly at the bottom of 10 popsicles molds, filling the molds about ⅓ of the way up. Place the mold in the freezer for about 10 minutes to set. This will allow to pour each layer without mixing the colours. While the first layer is setting, prepare your 3 other types of fruit puree by placing the ingredient for each puree in the blender, starting with the green, then red and finally the purple. Transfer each fruit puree in a separate bowl. Layer the green puree over the yellow one and set aside in the freezer for 5-10 minutes. Repeat this step with the red and purple layers. Once you have poured the last layer, set the mold in the freezer for 10 more minutes. Remove from freezer, place lid over the popsicle tray and place the wooden sticks in the mold. Freezing the popsicles for 10 minutes before placing the stick will help ensuring that your stick remains straight. Leave in the freezer overnight. Remove popsicles from mold by running hot water on the mold for a few seconds. Place the frozen treats in freezer bags or container and they will be ready to enjoy when you need them! 3.2.2708
