Ingredients

  • 3 loaves
  • 1/2 inch in diameter and
  • 1/2 inch in high
  • 1 cup (115g) wholemeal (whole-wheat) bread flour
  • 3 cups (350g) unbleached white bread flour
  • 1 ½ tsp (7.5ml) salt
  • ½ oz (15g) fresh yeast (or 1 Tbsp. dry yeast)
  • ⅔ cup (150ml) lukewarm milk
  • ½ cup (120ml) lukewarm water
  • 4 Tbsp. (50g) unsalted butter, melted
  • 1 Tbsp. chopped fresh chives
  • 1 Tbsp. chopped fresh parsley
  • 2 tsp chopped fresh sage
  • 2 garlic cloves, crushed
  • Beaten egg, for glazing
  • Fennel seeds, for sprinkling (optional)
