Now coming to the recipe, Besan burfi- it is a fudge made with roasted gram flour, ghee and sugar. Today I am sharing the recipe of Besan Burfi I prepared for Rakshabandhan
This goes very well with Dosa / idli I like to have it with chapathi also. Traditional one is using besanflour but my mum does with roasted gram dhal (which I will post it shortly)
Add besanflour and switch to low flame. I have used store-bought flour to prepare ladoo, but you can try it with fresh homemade flour which will give totally different experience
Add besan and roast it until the raw smell disappears. The fudge was not gooey, but was firm and soft. Makes 8 PiecesBesan - 1/2 cupSugar - 1/2cupGhee - 3 tbsp plus 1 tspMilk - 1/4 cupCashew nuts - 10 ( optional)Cardamom - 3 pods powderedSaffron- a pinchPreparation. Heat the pan with 2 tbsp ghee on a little over medium heat. Add milk, sugar and 1 tbsp of ghee and mix well. Add 1 tsp of ghee, add cardamom, chopped cashew nut pieces and remove from heat. 1/2 cup. 1/4 cup
For now I have these delicious Besan Cookies ( Gram flour cookies ) that I baked as soon as the festivities were over coz I was really missing the baking
When the besan khawa mixture absorb the ghee and releases nice aroma, switch off the flame. Besan khawa barfi is a delicious treat for people of all age group
Stir to combine and let it set for about 5 minutes Add the chickpeaflour, cumin and paprika to the bowl with flaxseed meal mixture Take a wooden spoon and stir the ingredients Take the cold water and start adding this to the flour mixture slowly while stirring
Again, this is a famous side dish/curry of Rajasthan, as you all know chillies are grown in Rajasthan in mass, so you will see all kinds of green chili preparations in the cuisine

Add the chickpea flower, cumin and paprika to the bowl with flaxseed meal mixture. Take the cold water and start adding this to the flour mixture slowly while stirring
Dip the tip of each ladoo at a time into melted butter or ghee. When this aroma diffuses into the whole house, you know that the Chickpeaflour/ Besan is roasted completely
Let it cool and then you can cut into barfis/fudges. Take a heavy bottomed kadai/pan and add mango pulp,sugar,grated ricotta/paneer and let it cook on a medium flame initially and then when the mixture thickens lower it to simmer
