  • Ingredients
  • 1 cup of orange juice
  • 1 tablespoon of fresh grated ginger
  • 2 cloves of garlic
  • 1/4 cup of coconut sugar (can substitute with brown sugar)
  • 2 tablespoons of tamari or low-sodium soy sauce (gluten-free if needed)
  • 1 tablespoon of rice wine vinegar
  • 1/2 cup of water
  • 1 tablespoon of arrowroot starch
  • 2 tablespoons of unrefined coconut oil
  • 1 black of organic extra-firm tofu, cut into 1/2 inch cubes
  • 1 medium bunch of broccoli, cut into florets
  • 1 cup of frozen edamame
  • 1/2 cup of raw cashews
  • 2 green onions, chopped
  • 1 tablespoon of sesame seeds
  • 4 servings of cooked brown rice
