Remove roast fromthe oven, slice, and serve. Roast the 4-pound prime rib (see footnote if using a larger and smaller roast) in the preheated oven for 20 minutes. Turn the oven off and, leaving the roast in the oven with the door closed, let the roast sit in the oven for 2 hours
Use the back of a fork to gently press pistachio mixture down onto sweet potatoes. Return to the pot and mash 2 tablespoons butter into sweet potatoes. Whisk eggs, maple syrup, buttermilk, milk, vanilla extract, cayenne pepper, allspice, and 1/2 teaspoon salt together in a large bowl until smooth. Mix pistachios, brown sugar, flour, and 1/4 cup melted butter together until completely mixed. Bake in the preheated oven until topping is browned and casserole is set, 25 to 30 minutes
Drizzle in the remaining melted butter. Grate about a quarter of the cheese over the potatoes. Stack potato slices in uneven layers (to resemble flower petals) in prepared muffin tin, ending with some of the smaller pieces
