Ingredients

  • 4 tablespoons olive oil
  • 4-5 skinless organic chicken thighs, or leftover roasted chicken works great for stove top soup
  • 1/2 onion, diced
  • 1 carrot, diced
  • 2 stalks of celery, diced
  • 1 clove of garlic, minced
  • 2 cups Kale, chopped
  • 14.5 ounce can stewed tomatoes with juice
  • 5 cups of gluten free low sodium chicken broth
  • 1 can black beans, rinsed and drained
  • 1 teaspoon gluten free cayenne pepper
  • 4 teaspoons gluten free cumin
  • 1 teaspoon gluten free chili powder
  • salt and pepper to taste
  • tortilla chips- I use fresh gluten free corn tortilla's and fry them in a dry cast iron pan until lightly brown
