  • 2 lb boneless skinless chicken breasts, cut into strips or cubes
  • 2 cups Kellogg’s Gluten Free Rice Crispies, crushed in a blender
  • 2 Tbsp Louisiana style fish fry mix or cornmeal
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • salt to taste
  • ⅔ cup olive oil + some for the baking pan
