I've wanted to make a glutenfree muffin so that I could share it with my staff at work. Two of the counselors can't have gluten and it makes me sad when I bring in treats that can't be enjoyed by everyone

¼ cup Lily’s chocolatechips. I use Lily’s Chips because they are sweetened with stevia. She sent me a traditional Coconut Cream Cake recipe and asked me if I could “healthify” it and make it glutenfree for her birthday

First melt your chocolate and coconut oil together, set aside. ¼ cup coconut oil. We prefer to keep them in the freezer after the first day for best texture…they don’t freeze so rock hard that you can’t bite through them…this is my husband’s current favorite cookie
