Ingredients

  • 2 cups persimmon puree (blend down roughly 4 small RIPE persimmons)
  • 3 small ripe bananas
  • 1/2 cup olive oil (or another baking oil)
  • 3/4 cup maple syrup (or liquid sweetener of your choice)
  • 3/4 cup non-dairy milk of your choice (I used almond milk)
  • 1 tbsp pure vanilla extract
  • 3/4 cup cocoa powder
  • 1 cup buckwheat flour
  • 1/2 cup brown rice flour
  • 1/2 cup potato starch (tapioca or arrowroot starch would work too)
  • 1 tsp guar gum (or xantham gum)
  • 1 1/2 tsp GF baking powder
  • 1 tsp baking soda
  • dash of salt

  • 1/2 cup coconut oil
  • 1/4 cup cocoa powder (or carob powder)
  • 3 tbsp liquid sweetener of your choice (I used maple syrup)
  • 1 tsp pure vanilla extract
