Ingredients

  • 12 muffins
  • 1 1/2 cups all-purpose gluten-free flour or a homemade blend of GF flours (see above)
  • 1/2 tsp xanthan gum
  • 1/2 tsp fine grain salt
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 3 tsp ground cinnamon
  • 3/4 cup milk chocolate chips
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 1/3 cups fresh zucchini, grated
  • 2 large eggs
  • 4 tbsp vegetable oil
  • 2 tbsp plain Greek yogurt
  • 1 tsp pure vanilla extract
