  • Tilapia
  • 4 tilapia filets
  • 1/2 cup flour
  • 1/2 cup cornmeal
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tsp Cajun seasoning
  • 1 1/2 tsp paprika
  • 1/4-1/3 cup yellow mustard
  • Oil for frying
  • Lemon wedges
  • 1/2 lb fingerling potatoes, halved
  • 1/2 lb fresh green beans, trimmed
  • 1/2 lb fresh asparagus
  • 3 cups baby spinach
  • 2 cups cherry tomatoes, halved
  • 1/4 cup green onions, sliced
  • Salt and pepper as desired
  • Red wine vinaigrette
