  • 1 red onion, peeled and sliced
  • 2 red peppers, deseeded and thinly sliced Sea salt and freshly ground black pepper
  • 1 tbsp caster sugar
  • 3 tbsp red wine vinegar
  • 1 tbsp extra virgin olive oil Small bunch of basil, leaves shredded
