Ingredients

  • 3/4 cup coconut flour
  • 1 1/2 cups flour from ground macadamia nuts (whir through a food processor or small blender)
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/4 cup palm or organic cane sugar
  • 2 eggs
  • 2 tbs maple syrup or raw honey
  • 1/3 cup unsweetened vanilla almond milk
  • 1 tsp vanilla extract
  • 2.5 tbs melted coconut oil or butter
  • 1 cup blueberries, tossed in a little coconut flour or arrowroot starch
