  • 8 filo sheets
  • 5 leeks, thinly sliced
  • 4 spring onions, chopped
  • 1 shallot
  • 6 tablespoons olive oil
  • 2 tablespoons flour
  • 1 cup of milk
  • ¾ cup white wine
  • ¼ cup water
  • 12 oz crumbled feta
  • 3 oz grated gruyere cheese (or graviera from Crete)
  • ¼ bunch parsley, chopped
  • ¼ bunch dill, chopped
  • 6 tablespoons butter, melted (to grease the filo sheets)
  • 1 egg yolk, beaten
  • Salt
  • Pepper
