Ingredients

  • For the Chicken: 2 lbs boneless, skinless chicken thighs
  • ¼ cup plain Greek yogurt
  • Juice of 1 lemon
  • Splash of apple cider vinegar
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced or pressed

  • 2 tablespoons chopped fresh dill

  • For the Pickled Veggies: 1 large red onion, thinly sliced
  • 1 large seedless cucumber, thinly sliced
  • 1 jalapeño pepper, sliced
  • 1 cup apple cider vinegar
  • ½ cup water
  • ¼ cup sugar
  • 2 tablespoons kosher salt
  • 1 teaspoon black peppercorns
