Ingredients

  • 1 Onion, finely chopped
  • 2 cloves Garlic, finely chopped
  • 2 celery sticks, finely chopped
  • 500 gm Lean Minced Beef
  • 100 ml Red Wine
  • 400 gm/1 can chopped tomatoes
  • 1 Tbsp Tomato Purée
  • 10 cm/4 inch piece Cinnamon Stick
  • 5 whole Cloves
  • 3/4 Tbsp dried Oregano
  • 1 Tbsp Fresh Oregano, chopped (*optional)
  • 100 ml water
  • 1½ tsp Salt
  • Freshly ground Black Pepper to taste
  • For the Pasta
  • 250 gm tubular pasta, such as rigatoni. (*I
  • just used Penne)
  • 1 Egg, lightly beaten
  • 25 gm Mozzarella Cheese
  • 50 gm
  • Butter
  • 50 gm Plain Flour
  • 400 ml Semi Skimmed Milk
  • ¼ tsp ground Nutmeg
  • Salt and freshly ground Black Pepper, to taste
  • 120 gm
  • Mozzarella Cheese (to sprinkle over the top of the dish)
  • Simmer on medium heat for 30 minutes stirring every now and then. Add in the
  • water and season with salt and pepper. Simmer for another 10 minutes. The sauce
  • should be thick but not dry. Remove from heat and discard the cinnamon stick.
