  • 1 medium onion, chopped, about 1 cup 1 yellow bell pepper, chopped
  • 4 cloves garlic, minced
  • 2 lemons, juiced
  • 1 Tbsp lemon zest
  • 1 tsp oregano, dried
  • 2 bay leaves
  • 2 cans garbanzo beans, undrained
  • 2 cups water, or
  • 1 1/2 tsp Salt
  • Pepper to taste
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup feta cheese, crumbled
