Ingredients

  • 1 lb cut into bite sized pieces ( I used thigh pieces)
  • 1 small, peeled , deseeded and diced medium.
  • 1 tbsp Onion: 1 medium, chopped
  • 2-3 small cloves, chopped fine
  • 1 inch piece, cut julienne.
  • 2-3 tbsp Parsley: 1 tbsp, chopped ( you could use cilantro, I didn't have any at the time).
  • 3 cups
