Ingredients

  • 2 ears grilled sweet corn, kernels removed from cob
  • 1 roasted poblano pepper, diced
  • 1 pint cherry tomatoes, halved
  • 1/4 cup red onion, chopped
  • 1/4 cup fresh basil, chopped
  • 1 tablespoon fresh cilantro, chopped
  • 1/2 cup feta cheese
  • 1/3 cup raw almonds, chopped
  • Juice
  • 1 orange Juice of 2 limes Zest of

  • 2 tablespoons olive oil
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon fresh ginger, grated
  • 1 tablespoon agave nectar
