Ingredients

  • 12 minutes total, turning a few times and moving off
  • 1 tbsp unsalted butter
  • 2 tsp finely chopped shallot
  • 1/3 cup apricot preserves
  • 1-1/2 tbsp whole-grain mustard
  • 1 tsp white wine vinegar
  • sea salt
  • freshly ground black pepper
  • 1 tsp finely chopped rosemary
  • 4 bone-in pork loin chops, about 1-inch thick
  • olive oil, for rubbing
  • Transfer to a platter
  • and let rest 5 minutes. Brush with the remaining glaze and serve.
