Red Iguana has long been hailed as the best Mexican restaurant in Salt Lake City, Utah. They are known all over the country for their mole (pronounced MOH-lay). And now, thanks to the prodding of the local vegan community, they now have vegan and gluten free options. They haven’t reprinted their menus yet but the staff is very knowledgeable about what is suitable for vegans. If you don’t want to wait in line, you’ll want to get there early, think 4:50pm. Any later than that and you’ll have a wait. If you do have to wait, don’t worry, the food is worth it.
