Ingredients

  • 15 minutes
  • 1 bunch asparagus
  • 1 pound shrimp, peeled and deveined
  • 3 tablespoons olive oil, divided
  • 1/2 teaspoon coarse sea salt, divided
  • 1/2 teaspoon ground black pepper, divided
  • 1 tablespoon Dijon mustard
  • 2 teaspoons honey
  • 2 tablespoons red wine vinegar
  • 2 cups salad greens or mesclun mix
  • 2 tablespoons fresh basil, chopped
  • 1 teaspoon oregano (I used dried)
  • 1/4 cup grape tomatoes, halved (optional, I opted out, mostly because I forgot to buy them)
