Ingredients

  • 2 pounds beef, cut in cubes (or pork)
  • 11 cup chopped onions
  • 11/2 cup green peppers
  • 11/2 cup red peppers
  • 11/4 cup chives, chopped
  • 11/2 cup bitter orange juice
  • 11/4 cup Vinegar
  • 11/4 cup water
  • 13 Stalk of Thyme
  • 11/4 cup chopped Parsley
  • 11/2 cup Haitian Marinade**
  • 11/4 teaspoon salt
  • 11/4 teaspoon black pepper
  • 11/2 cup of vinegar
  • 11 beef bouillon cubeCut the meat into medium pieces.
  • 1 Wash thoroughly with the lime and/or sour orange juice.
  • 1 Season well with Adobo seasoning salt, rosemary, thyme, parsley, garlic powder, pepper and let marinate for 4 hours.
  • 1 In a saucepan, cover meat with water and boil over medium-high heat until water evaporates.
  • 1 Stirring occasionally, continue to cook until meat is tender.
  • 1 Remove the meat and set aside.
  • 1 In a skillet or deep fryer, heat oil and fry each side to brown evenly.
