Ingredients

  • 200 grams of ripe mango, cut into dices
  • 1 teaspoon of lime juice
  • 2 teaspoons of gelatine
  • 2 tablespoons of cold water
  • 55 grams of caster sugar
  • 100 grams of icing /confectionery sugar, sifted
  • 28 grams of cake flour, sifted
  • 100 grams of almond meal, sifted
  • 4 eggs, at room temperature
  • 20 grams of unsalted butter
  • 4 egg white, at room temperature
  • 18 grams of caster sugar
  • Breakfast Marmalade jam
  • 2 packets of mango-flavoured jelly powder
  • 200 ml of cold water
  • 200 ml of hot water
  • 1 tablespoon of gelatine
  • 1 ripe mango flesh
  • 300 ml of thickened cream
  • 1 teaspoon of vanilla essence
  • 2 large egg white (at room temperature)
  • 1 teaspoon vanilla essence
  • 1/4 teaspoon cream of tartar
  • 65 grams of caster sugar
  • yellow and orange color gel
