  • 1 cup of cooked shrimp
  • ½ red bell pepper thinly sliced
  • ½ yellow bell pepper thinly sliced
  • 1 cup sun dried tomatoes
  • ½ cup rucola
  • black pepper to taste
  • 4 tbsp olive oil for frying
