Ingredients

  • 4 medium ripe bananas
  • 1/4 cup Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 2/3 cups whole wheat flour [buckwheat or spelt works too]
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup maple syrup or honey [I used molasses]
  • 2 eggs [chia or flax egg may be used]
  • 1/2 cup toasted walnuts optional
