Today, I have a quick and easy recipe to share with you. These Coconut CandyBars are loaded with healthy saturated fats, and are the most perfect treat to always have around the house when you want something sweet (at least for me this is true
The traditional recipe is very high in fat and not very healthy. I found a recipe in The Passionate Vegetable by Suzanne Landry, The Fresh Food Chef, that is very similar to the traditional magic cookie bars
Earlier I used to make these bars with cornflakes as the kids loved the crunchiness it gave contrasting the soft oats, but recently as I ran out of cornflakes and I had lots of pori (Rice Krispies) left out after making Kaara pori for our snacks, decided to use it in the bars and it was like a combination of both granola bars and rice krispies bars into one single bar
I was trying to organize my recipe binder, when I stumbled upon this recipe. You know, when they send you offers to buy or preview cookbooks for 30 days etc, well I love to cut the free recipes out and try them, LOL.
