Ingredients

  • 1 cooked and mashed sweet potato (about 1 1/4 cups)
  • 2 large eggs
  • 1/4 cup chopped dates
  • 2 tbsp brown sugar or maple sugar
  • 1 tsp vanilla
  • 2 cups large flake oats
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/3 cup dried cranberries or raisins
  • 1/3 cup chocolate chips or peanut butter chips
  • 1/2 tsp salt
  • 1/2 cup chopped nuts (I used pecans)
  • 1/4 cup ground chia or flax seed
  • 350 F. Prepare baking sheets with parchment paper or silpat liners

  • 12-14 minutes Cool on baking sheets. Enjoy immediately or wrap individually in plastic wrap and store in a ziploc in the freezer.
