Since Meyer lemons are always abundant around Christmas I used them, but if you can't seem to find any, you can always use regular lemons (the curd will be slightly more tart)
This time I've used shop bought lemoncurd so you can whip these up quickly, to be honest I love lemoncurd now so it could be shop bought or homemade, it's just fabulous
I can't wait for spring to arrive, and nothing feels more like spring to me than Meyer LemonCurd. Meyer Lemons although still sour, are less acidic than a regular lemon
What you have now is homemade sweet cream butter, and the liquid below is slightly sweetened buttermilk, which you can use in any recipe which calls for milk or buttermilk (I used ours in the Strawberry Breakfast Bread Pudding I made for breakfast the next morning - delicious
For the LemonCurd. In a small pan mix the yolks with sugar, zest and the lemon juice. Press the gelatin sheet thoroughly to remove the extra liquids and put it into a warm curd (wait for it to melt completely)
Pickles are perfect with curd / yogurt rice, sambar rice etc. Wash the lemon thoroughly, dry it using paper towel, cut it into small pieces, place lemon pieces and salt in a air tight container and mix well
Homemade marshmallows can be used in any recipe that calls for marshmallows. The flavors I chose were strawberry and lemon but you can make these just about any flavor you want
Add butter, lemon juice and mix. "Curd (creme) de Limão". and peels from 2 lemons. lemon peels in the mixing bowl and pulverize 25sec/speed 9. and peels from 2 lemons
So here we are with an abundant meyer lemon harvest happening right now, which also means we’re up to our ears in lemoncurd and homemadelemon meringue marshmallows
