Ingredients

  • 16 cups water
  • ½ cup brown sugar
  • ¼ cup honey
  • ¼ cup salt
  • 1 carrot
  • 1 celery stalk
  • ½ onion, cut in half
  • 2 garlic cloves
  • 5 bay leaves
  • ½ teaspoon mustard seeds
  • ½ teaspoon black peppercorn seeds
  • sprig of fresh thyme
  • small sprig fresh rosemary
  • sprig of fresh sage

  • You will also need
  • 1 turkey breast
  • 4 cups wood chips, soaked in water (I’m using a combination of alder and cherry wood chips)
