Ingredients

  • 2 Tablespoons lemon juice
  • 2 1/2 cups chicken broth
  • 2 Tablespoons honey
  • 3 Tablespoons soy sauce
  • 1 teaspoon olive oil
  • 1 medium onion – chopped
  • 2 Tablespoons of minced/chopped garlic
  • 1 cup long grain rice – uncooked
  • 1/2 teaspoon black pepper
  • 8 skinless chicken thighs (you can also use 3 large chicken breasts and cut into bite size pieces)
