  • 12 to 18 pound turkey, neck and giblets removed, preferably fresh but defrosted if frozen
  • 2 gallons cold water
  • 10 ounces Kikkoman Naturally Brewed Soy Sauce
  • 1/2 cup kosher salt
  • 1/2 cup sugar
  • 2 tablespoons dried sage
  • 2 tablespoons dried rosemary leaves
  • 2 tablespoon dried thyme
  • Fresh herbs, such as thyme, rosemary, and sage
  • 1 onion, peeled and chopped
  • 1 apple, cored and chopped
  • Canola oil
  • 2 gallons cold water 10 ounces Kikkoman Naturally Brewed Soy Sauce 1/2 cup kosher salt 1/2 cup sugar 2 tablespoons dried sage 2 tablespoons dried rosemary leaves 2 tablespoon dried thyme
