I made this bananabreada couple of weeks agoand since it took my boys and my dad less thana full afternoonto demolish it, I knew I needed tomake it again – and this time, to get pics
This bread is over the topamazing. For the pinacoladabread. For the buttered rum glaze. 1/2 cup sugar. 1/2 cup brown sugar. 1 tsp bakingsoda. 1/2 tsp salt. 1/2 cup canola oil. 1 tsp coconut extract (my newest obsession). 8 oz crushed pineapple, drained. 2 ripe bananas, mashed. 1/2 cup sour cream. 1/4 cup rum (I used CaptainMorgan spiced rum. 1/2 tsp vanilla. 1 1/2 cups powdered sugar. For more information, please 1 1/2 cups flour. 1/2 cup sugar. 1/2 cup brown sugar. 1 tsp bakingsoda. 1/2 tsp salt. 1/2 cup canola oil. 1 tsp coconut extract. 8 oz crushed pineapple. 2 ripe bananas. 1/2 cup sour cream. 1/2 tsp vanilla. 1 1/2 cups powdered sugar
[Recipe adapted from How Sweet Eats]. So these were supposed to be banana blondies but then I hadtoo much fun playingaround with the ingredients and ended up making the most fluffy yet dense and moist bananabreadcake there ever was
Warning, since the frosting has cool whip in it, exposure toheat will make it runny. Frost cooled cake, and sprinkle with coconut andrefrigerate until serving
Okay, I don't know about you guys, but when I wasabout twelve, I started forgetting howto "play". Also, if you want it to be like arealpiñacolada, don't be afraidtoadd some rum into the cake while you're adding the pineappleand/or mix some into the frosting
