Ingredients

  • 4 as a main dish, or 8 as a side
  • 1 cup water
  • 1 cup orange juice
  • 1 cup quinoa
  • 1 15 oz can chickpeas
  • 2 tomatoes, diced
  • 1 sweet red, orange or yellow pepper, diced or sliced thinly
  • 1 small red onion or 3 small shallots, diced
  • 1 clove garlic, minced
  • 1/2 cup raisins
  • 1 tsp curry powder
  • 1 lime cilantro, for garnish
