Ingredients

  • 3 lb beef, cut into chunks
  • 5 tablespoons oil
  • Whole spices
  • 1 cinnamon stick
  • 5 garlic cloves
  • 3 star anise
  • 4 green cardamom pods
  • Whole spices, dry roasted and then ground into powder
  • 1 tablespoon fennel seeds
  • 1 tablespoon cumin seeds
  • 1 ½ tablespoon coriander seeds
  • Wet Paste
  • 3 stalks lemongrass, white part only, thinly sliced
  • 1 2- inch piece of galangal
  • 1 1- inch piece of ginger
  • 10 shallots
  • 1 2- inch piece of turmeric root
  • 6 kaffir lime leaves, finely chopped
  • 6 garlic cloves
  • 10 red hot chili peppers, soaked and seeded
  • 2 cups coconut milk
  • 5 tablespoons kerisik (grated coconut, toasted and crushed) (optional)
  • 2 tablespoons pure tamarind extract
  • Salt
  • Palm sugar (to taste)
