The post One Pot Mexican ChickenandRice appeared first on RecipeTin Eats. When I saw Imma’s Oven Baked Mexican Rice, I wondered if I could cook chicken in the same pot
It’s filled with flavor and keeps the ingredients to a minimum. This delicious and lightened up creamy chicken, broccoli, andrice divan can all be made in one potand in under 30 minutes
In a large pot over medium-high heat, heat olive oil. Garnish with remaining lemon zest and serve. Add chicken to potand season with 1/2 tsp salt, 1/4 tsp black pepper, and half the lemon zest. Brown chicken on all sides, 5 minutes. Add garlic and onion and sauté, scraping bottom of the pan, 2 to 3 minutes. Add carrots and celery cooking until softened, about 5 minutes. Add chicken stock, lemon juice, and cooked riceand simmer for 5 minutes
Add rice, broth, honey, soy sauce, vinegar and peas and bring to a simmer over medium high heat. Add chickenand cook until browned on the outside, about 2 minutes. Add peppers and cook 3-4 minutes until crisp-tender. Add carrots, ginger and garlic and cook 1 more minute, stirring. Cover, reduce the heat and cook for 3-4 minutes until rice is tender
Pour out the milky water, and continue to rinse until the water is clear. Rinse rice under cold water by gently scrubbing the rice with your fingertips in a circling motion
And I just don’t think in that situation that you should ever have to settle for a frozen dinner or pizza, especially when there are recipes like these InstantPotChicken Thighs with Lemon Sauce that are so quick and easy to make
Turn on a multi-functional pressure cooker (such as InstantPot(R)) and select Saute function. place chicken back in the pot, breast side down on the trivet, and pour in chicken broth
